
Plant-based meat alternatives offer nutritional and microbiological benefits
The global production of conventional meat raises major challenges for the environment, public health, and food security. Plant-based alternatives, such as plant-based steaks, emerge as a promising solution to address these issues. A recent study compared wheat-based, mushroom-based, and soy-based steaks with traditional meat steaks, analyzing their nutritional composition, physicochemical properties, antioxidant content, microbiological quality, and sensory characteristics.
Wheat-based steaks stand out with the highest protein content among plant-based alternatives, at nearly 12%, closely followed by soy-based steaks, which contain about 10.7%. Mushroom-based steaks, on the other hand, have the lowest protein content at 5.8%, but compensate with a record moisture content of nearly 64%, which enhances their juiciness. Traditional meat steaks contain 13.5% protein and 23.7% fat, giving them a much higher caloric density.
In terms of carbohydrates, soy-based steaks lead with 23%, while wheat-based steaks offer the highest fiber content at 14.7%, a benefit for digestive health. Meat steaks, however, contain very little, only 4.3%. Mushrooms, rich in bioactive compounds such as phenolic acids and flavonoids, provide superior antioxidant activity compared to other plant-based alternatives and meat. These compounds help reduce oxidative stress, which is associated with chronic diseases such as cardiovascular disorders or diabetes.
From a microbiological standpoint, plant-based steaks exhibit significantly lower microbial counts than meat. Meat steaks show a total viable aerobic count of 27,000 units per gram, whereas plant-based alternatives range between 1,700 and 3,900 units per gram. No traces of Staphylococcus aureus or Salmonella were detected in the samples, confirming their food safety.
The sensory evaluation, conducted by 35 participants, reveals that meat steaks receive the highest scores for taste, texture, and overall acceptability. However, the differences between plant-based steaks are not statistically significant. Soy-based steaks most closely resemble meat in terms of appearance and texture, thanks to the ability of soy proteins to form fibrous structures. Mushroom-based steaks, with their high water content and umami compounds, offer appreciable juiciness. Wheat-based steaks, although high in fiber, are perceived as less juicy due to their drier texture.
Plant-based alternatives thus prove to be viable options, offering nutritional benefits such as reduced fat and calorie content, while providing fiber, minerals, and antioxidants. They also meet the requirements of halal diets by eliminating concerns related to animal slaughter and cross-contamination. Although meat retains a sensory advantage, plant-based steaks, particularly those made from soy and mushrooms, present an interesting balance between functional properties and acceptability, while supporting sustainable and ethical eating.
